What would Easter be without Easter eggs? Well, it would be a lot less colorful. Eggs symbolize birth and a renewed life. Eggs went through a period were they were considered to be the enemy in the war against heart disease because they were high in cholesterol. Lucky for us, research is proving that the cholesterol in food does not have the negative effect on blood cholesterol that it was once thought to. So in a way, eggs are getting a renewed life, and I couldn't be happier. They are great any time of the day, but studies show that people who eat eggs for breakfast are more satisfied and eat fewer calories throughout the day compared to those who eat a more carbohydrate-rich meal like cereal and a bagel (but bagels are so good).

So why not do more than just color your eggs, throw together an omelet or frittata filled with vegetables and take a Real Bite out of eggs.
